Manatsuru Shuzo (The Manatsuru Sake Brewery) was founded in 1751 and is one of the oldest sake breweries in Echizen Ōno. Echizen Ōno is known as "Little Kyoto" in west-central Japan and is surrounded by mountains and snow in the winter, making it the perfect enviroment for sake brewery.
Manatsuru continues the traditional handmade brewing techniques and specializes in making luxury Ginjo-shu, a type of sake where at least 40% of the rice is polished away.
